(VIDEO DEMO AT THE END!) This is made with my homemade elderberry juice concentrate. You may make your own concentrate by steam juicing fresh elderberries and then reduce the resulting juice by half. If you do not have fresh elderberries, you may use dry elderberries … use a 1:4 ratios, berries to water. Simmer a while until the berries look “spent”. When I used to do it this way, I’d allow the simmered berries to sit in the covered pan over night on the stove top. Strain well and then reduce by half. OR another more expensive option is to just order elderberry juice concentrate - be sure it’s 100% elderberry juice concentrate with nothing else added (a little citric acid is fine). Here is an example of concentrate that I was able to find on Amazon … it’s rather expensive.
For those curious, here is a photo of steam juicing elderberries. This is by far the easiest way to process larger amounts of fresh berries!!!! The top portion is a steamer basket packed with berries. The middle section is where the resulting juice sits until it siphons out of the tubing into the waiting separate container. The bottom section is the boiling water. Here’s the steam juicer I use.
Elderberry Syrup Recipe
Into a heavy bottom stainless steel pan:
1/2pt / 8oz elderberry juice concentrate
1T rosehip powder
1T turmeric powder
1T ceylon cinnamon powder
1T ginger powder
1t ground cloves
1/2t ground cardamom
1/8t trikatu powder or black pepper
Mix well, cover, simmer for 20 minutes. When 20 minutes is up, remove from heat and allow to cool to 110*f or less - you do not want to ruin the raw ingredients!
Stir in:
1/4c fresh lemon juice
1/4c raw apple cider vinegar
3/4c / 252g raw honey**
** use maple syrup if this is for a baby younger than 1 year old.
Mix well and transfer to a glass bottle. Keep in the refrigerator and use within 2 weeks. I like to take 1T a day for a maintenance dose (1t for younger children) and 3T or more if not feeling the best. SHAKE WELL BEFORE USING!!! The herbs will settle at the bottom. Some children might find this a bit spicy … if that’s the case, add a little more honey or maple syrup. Most people do a 1:1 reduced elderberry juice to honey ratio, so that would be 1c of honey instead of 3/4c.
